  • 1 1/2 cup light brown sugar
  • 8 oz unsalted European butter
  • 1 cup granulated sugar
  • 2 large eggs
  • 2 large yolks
  • 1 tsp of vanilla extract
  • 2 1/2 cups all-purpose flour
  • 2 tsp baking soda
  • 1 tsp salt
  • 1/4 cup granulated sugar
  • 1 Tbsp +1 tsp ground cinnamon
  1. Start off by slicing butter into equal size cubes, this will allow butter to melt evenly
  2. Melt the butter over medium heat in a pot
  3. Once butter has melted, continue to cook over medium to low heat
  4. Melted butter will foam up
  5. Accommodate all the foam on the pot
  6. Brown specs will start to float up to the top once the foam has receded
  7. Once the butter smells supper nutty, remove it from the heat
  8. Pour the brown butter into a container and allow it to cool to room temperature
  9. Add brown sugar and granulated sugar. Mix until smooth
  10. Add eggs and yolks one at at time. Mixing until each egg is combined before adding the next. Mix in vanilla extract
  11. In a bowl, whisk together flour, baking soda, and salt. Add to mixing bowl in three additions, mixing on low speed until fully incorporated
  12. Using a cookie scoop cream scoop, portion out cookie dough. Place scooped dough on a parchment lined baking sheet. Cover with plastic wrap. Freeze or chill dough in fridge until firm
  13. Preheat oven to 325 degrees F
  14. In a bowl, combine remaining granulated sugar and ground cinnamon
  15. Remove cookie balls from fridge and roll in cinnamon-sugar mixture. Place on parchment lined baking sheet, leaving about 2 inch between cookie balls to allow cookies enough space to spread
  16. Bake for 15-18 minutes, rotate pan halfway thru baking. Bake until the cookies have spread out and the edges of the cookies are golden brown. Let cool in pan for 10-15 minutes to allow cookie to firm up. Transfer cookies to wire rack to cool completely. Roll cooled cookies in cinnamon-sugar mixture once again!
  17. And your cookies are ready to be eaten!!! Enjoy!
